Tripe soupe

Tripe. Ingredients: 1kg beef tripe cut, a bone of beef, 3 eggs, 250 g sour cream, 3-4 carrots, one bunch of parsley, salt and pepper. Preparation: Cut the carrots into small pieces and place in a bowl, add the tripe and the bone and boil. Cream and after 35 minutes, add the beaten egg and sour cream. Place salt, pepper and finely chop parsley and add it. Add vinegar and garlic to taste. Serve with sour cream and jalapeno peppers. Enjoy your meal.
